Christmas Cookie Recipe

A Christmas Cookie Recipe is something you should always have available. These ones are lightly flavoured with peppermint and would make the perfect Christmas gift.

For the cookies, you will need:
– 315 grams all-purpose flour
– 1 tablespoon baking powder
– ½ teaspoon salt
– 230 grams butter
– 400 grams of granulated sugar
– ¼ teaspoon peppermint extract
– 1 large egg
– 100 grams of chocolate chips

For the icing, you will need:
– 125 grams of icing sugar
– 3-5 tablespoons of double cream or milk

– Candy canes to decorate.

This would be a great Christmas Cookie Recipe to give as a gift. Fill a jar with the dry ingredients and include instructions for the rest!

Instructions:

1| Preheat the oven to 175°C.

2| First you want to start by combining the flour, baking powder and salt. Give it a quick mix to ensure all is incorporated.

3| Next, cream together the butter and the sugar in a separate bowl until it’s pale and fluffy. Once you have creamed the butter and sugar, add the egg and the peppermint extract and mix to combine.

4| Add the dry ingredients into the wet and fold together until it forms a dough. Then add the chocolate chips and gently stir them in.

5| Scoop the cookie batter onto a parchment lined baking tray. Make sure you leave space between them, as they will spread quite a bit. Bake for around 12 minutes or until the edges are slightly golden, then remove and cool completely. (To get a more even bake, you can rotate the tray halfway through).

6| While they’re cooling, place your candy canes into a zip lock bag and crush them.

7| To make the icing, gradually add the cream to the icing sugar. You don’t want it to get too runny, as you don’t want the icing falling off the cookies.

8| Finally, spoon the icing onto the cookies and sprinkle with the crushed candy canes.
